Potato & Leek Soup

Hey guys! I hope you had a nice Valentine’s day for those of you who celebrated it. You probably noticed that there was no post on Monday because I had a tough week and I had a lack of motivation to write anything. The recipe for this week is very simple and comforting. During winter I love eating soups for dinner so I usually buy canned soups but to be honest there is nothing better than a homemade one. A few weeks ago I decided to try a potato and leek soup from a French cooking book and everybody approved so now I have to prepare it every week. It is very easy to make and all you need is potatoes, a leek and some cream cheese.
  • 500g potatoes
  • 1 leek
  • 20g butter
  • 1l water
  • 100g cream cheese (Philadelphia or The Laughing Cow)
  • 2 bay leaves
  • A pinch of salt
  1. Peel potatoes and cut them into small quarters. Wash the leek and put the green part away. Now split the white part of the leek and slice it finely.
  2. In a big pan, melt the butter and add the chopped leek. Once the leek is tender, add cold water, potatoes, a pinch of salt and the bay leaves.
  3. Bring it to the boil then reduce the heat and let it simmer for 30-35 minutes with the lid on.
  4. Take off the bay leaves, add your cheese and mix it in a blender.
