Chocolate pancakes

Yes folks! It’s January, the month of resolutions that no one achieve! That’s probably why I never make New Year’s resolutions. So if you are feeling a bit depressed because you put on some weight after Christmas holidays and you realised you are not going to have a Victoria’s Secret body for 2017 then I have some comforting food for you  and it’s not that calorific. So chill and make pancakes because it is okay to not eat salad everyday.
The recipe is basically my normal pancakes mixture but with cocoa powder.

  • 220g plain flour
  • 50g cocoa powder
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 3 eggs
  • 30g butter
  • 500ml milk
  • 1 1/2 tbsp vanilla extract
  1. Start by mixing all the dry ingredients in a large bowl and dig a howl in the middle.
  2. Melt the butter in a bowl and add the eggs. Mix them all together and pour in the dry mixture. Whisk energitically and add the milk progressively. Finish with a 1 1/2 tablespoon of vanilla extract. You can also add chocolate chips for the fun. ­čśë Mix well.
  3. Let your pancake mixture at room temperature for 30-40 minutes.
  4. Lightly grease your pan with sunflower oil (if you have an anti-adhesive pan it’s even better) and pour a ladle of mixture. When you see the bottom is cooked flip it over.
